~Tuscan chicken YUM!





It's been a long time since I made this chicken recipe and I forgot how GREAT it turns out without all that much work.YUM!

Tuscan Chicken~



1 Whole fryer chicken or boneless breasts


3 TBSP olive oil


2 TBSP Herbs De Provence (in the spice section at store)


2 TBSP Grey Poupon




Rub chicken with olive oil,rub the seasoning in making sure to coat evenly,add grey poupon and spread all over the chicken


Place on roasting pan (preferably on a rack) for 1 hour at 400 degrees,about 45 min for boneless breasts.




Crispy outside, moist with great flavor and Super EASY!

Simple Womans Daybook


Wow,it's chilly here!It feels more like late November than mid October.It's like we skipped from hot weather to cold overnight!
I've enjoyed breaking out the warmer quilts,sweaters, and crock-pot this week to make a few cozy up meals,pot roast,mac n cheese w/ham,chili.I also pulled out the bread machine and fired it up this morning,the house smells so good!
I haven't done this in awhile so today seemed to be agood day for it.................

Outside my window... gloomy,windy,and chilly
I am thinking... I need to get so much done
I am thankful for... my dad who turned 88 yesterday
From the kitchen... bread!
I am wearing... red sweater and black pants
I am creating... nothing really right now
I am going...to pick up my daughter from choir and to the store later
I am reading...nothing right now
I am hoping...to be able to take the kids to the Pumkin patch this weekend
I am hearing...the kids
Around the house.....kids playing,dog sleeping,the usual
One of my favorite things right now.......Reese Whitherspoons new fragrance for Avon,got a sample in the mail and it's just so romantic and pretty.

Well,that's it for today.I'm really hoping the weather improves a bit of the kids are going to need winter coats on trick or treat night!

Fall Recipe and ramblings~



I just got this recipe in my e-mail from "Gooseberry Patch".It sounds sooo good.I made crock pot applesauce and apple butter last year and the kids loved it!
I've never put the pumpkin pie spice in the apple sauce before so that's something new.Sounds yummy!
Spiced Applesauce~
Enjoy this recipe from Autumn with Family & Friends

8 Golden Delicious apples, cored, peeled and cubed
1/2 c. brown sugar, packed
1/2 c. water
1 t. pumpkin pie spice

Combine all ingredients in a slow cooker; stir to mix. Cover and cook on low setting for 8 to 10 hours, or on high setting for 3 to 4 hours. When done, stir with a wooden spoon. Gently crush applesauce against side of slow cooker to desired consistency. Makes 8 to 10 servings.


I absolutely love The Gooseberry Patch cookbooks.I think "Autumn in the Country" is my favorite but I haven't seen this new one yet.



I've been slowly putting all my fall decorations out over the last week or so.I just love the warm colors and how cozy it makes the house feel.I've even seen pumpkins out on porches already!My mother-in-law grew some in her garden this year so I'm hoping to grab some of those soon.
I just can't believe we're half way through September already!I really want to try to slow down and enjoy the season with the kids this year,it seems to go by so quickly and then the rush of the Thanksgiving/Christmas season is upon us.
I've been doing alot of praying lately about helping me to live more in the moment and enjoy the time right here and now.It seems I'm always thinking about the past or worried about what is coming so Yes,I need to work on that!
I found this prayer that I thought was quite appropriate................

Wind of Heaven,

May we listen to your Spirit moving in the air of Autumn:

A season of transition, a season of change;

A season of harvest, a bounty of goodness;

I'm dealing with alot of things right now.Despite hurdles I'm forced to overcome I am remaining positive and looking to the future.
I have circle of supportive family and friends and what a blessing they've been to me and my family.I hope they all know how much I appreciate them.

I can't believe how fast this summer is flying by.My kids go back to school in 5 weeks! WOW! Fall is right around the corner and that can never come too soon for me!
My oldest son is learning to drive and boy that's a difficult one for me to handle.
Seeing him riding a skateboard is terrifying let alone sitting behind the wheel. Anyone have some extra nerves of steel they want to send me?

So anyway,life goes on with many changes and milestones every day.
One day at a time...................
