New Recipe~

This is a recipe I came up with on the fly last night and it was really good! I love mushrooms and garlic so it was a win win for me :)

1 16 oz box of spaghetti
12 button mushrooms,wiped off and sliced(I didn't use the stems)
2 TBSP Butter
3 TBSP olive oil
3 cloves garlic~sliced
1/2 Cup Heavy cream or half and half
1 tsp each of parsley,thyme,tarragon
dash of salt and pepper
freshly grated parm

Cook pasta according to directions,set aside
Saute shrooms, garlic in olive oil and butter on low/medium heat till tender (about 10 min or so)
add cream and herbs stir
add salt and pepper to taste then simmer on low for a few minutes
Add sauce to pasta then sprinkle the parmasean cheese over top.YUM!!! It's very rich and earthy,a nice change from all the Thanksgiving leftovers :)

Today, when I awoke, I suddenly realized that this is the best day of my life, ever! There were times when I wondered if I would make it to today; but I did! And because I did I'm going to celebrate!

Today, I'm going to celebrate what an unbelievable life I have had so far: the accomplishments, the many blessings, and, yes, even the hardships because they have served to make me stronger.

I will go through this day with my head held high, and a happy heart. I will marvel at the Universe seemingly simple gifts: the morning dew, the sun, the clouds, the trees, the flowers, the birds. Today, none of these miraculous creations will escape my notice.

Today, I will share my excitement for life with other people. I'll make someone smile. I'll go out of my way to perform an unexpected act of kindness for someone I don't even know.

Today, I'll give a sincere compliment to someone who seems down. I'll tell a child how special he is, and I'll tell someone I love just how deeply I care for her and how much she means to me.

Today is the day I quit worrying about what I don't have and start being grateful for all the wonderful things the Universe has already given me.

I'll remember that to worry is just a waste of time because my faith in the Divine Plan ensures everything will be just fine.

And tonight, before I got to bed, I'll go outside and raise my eyes to the heavens. I will stand in awe at the beauty of the stars and the moon.

As the day ends and I lay my head down on my pillow, I will thank the Universe for the best day of my life. And I will sleep the sleep of a contented child, excited with expectation because now tomorrow is going to be the best day of my life, ever!

Happy Monday all!!!
I wanted to post a pic of all the amazing Cucumbers and Zucchini I got from my mother in-law's garden yesterday. I would love to have my own garden one day and would like for it to be behind my white farmhouse on 10 acres in the Tenn. mountains! :p Well a girl can dream right!
I love Zucchini and have so many recipes that I'll be making. I learned a few years ago that you can shred it and freeze so I'm going to do that as well.

Here are some of the cucumbers~ They are just perfect with a dash of sea salt

Zucc and mushroom Quesedilla~ I had never made it before but it was so good!
I sauteed the Zucchini,portabellos mushrooms,onion, in olive oil until tender then added to 2 tortillas with some shredded cheese then cook for approx. 3-5 min on either side.(I just used the same pan I sauteed in)

It's so good with sour cream or salsa~ Delish!

I think I'll be making the Chocolate Zucc cake next :)

It's super hot today and we're under a heat advisory until tomorrow. It's getting ready to storm so I'm hoping that will cool it off some. I know it's only July but my mind is already wandering to those crisp cool days of Fall,I can't wait!

Hey All~ If anyone is still stopping by I thought I'd pop in and make a new post today. It's been a long time since I have and to tell you the truth I wasn't sure I would ever go back to blogging but I think I'm going to try it again. I started my blog 4 years ago pretty much just to keep a record of my kids and all the things we did and it is so amazing to go back and read some of those posts. We all have grown and changed SO much since then!
My life has taken many twists and turns in the last 5 years or so but I feel very blessed today and every day.
I have no idea if anyone is still reading or ever will but I'm going to continue here with what's important to me now....my family,my faith,my home,cooking, and who knows what else! We'll see how it goes :)

Dreaming of Tennessee

Our 17th wedding anniversary is coming up in a few weeks and I'm hoping and hoping again to be able to go to Tenn for a couple of days. We were married there in a sweet little Log Chapel on a snowy February afternoon. It was just the 2 of us but it was beautiful.
Tennessee has always been our "special" place. It's been almost 3 years since we've been able to go so I'm really looking forward to going again. Life is different there, everything is just different there.
The video above is the cabin I would like to stay in,we've stayed in some amazing places there over the years but this is one I've always had my eye on.It just looks so warm and cozy and what a VIEW!!!!

Winter Wonderland

We have been getting alot of snow today,I think at this point it's at about 4 inches with more coming. the kids got out of school early today and probably won't go tomorrow. It looks like our temps will be hovering around 0 by morning so we're gearing up to stay in with some jammies and hot cocoa!
I do not enjoy driving in the ice and snow at all but it is sure beautiful to look at.

I am super excited to be going to the Country Living fair this weekend!I've wanted to go for years but just never did manage to get there for one reason or another.The ladies from Gooseberry Patch will be there and I can't wait to meet them!! I've been a fan for more than 12 yrs now and have tons of their cookbooks!

Gosh it sure has been hot around here!I make no secret of the fact that I don't like the heat and really just don't do well in it at all.(cranky,tired,etc)
It's definitely had my mind wandering to fall with the cooler temps and crisp air.I thought I'd post some pics to remind me that all this summer heat will soon turn to cool breezes and all the warm and wonderful colors of fall.Call me crazy but I might go get a fall candle out and light it up just to help get me there!
There are a couple OF new scents at Yankee Candle that I'm looking forward to trying out.
One is this "Apple Pie"

The other is this...."Mountain Lodge".That reminded me of Tennessee.

Wow it's really warm here today! I absolutely have to get out and do some weeding this afternoon but I might wait till it cools off a bit.It went from Spring to Summer in like a minute!

I made a new veggie lasagna over the weekend and hope to post it tomorrow.I have to say it was pretty good!It was actually a really nice weekend,I spent time on Saturday with some family that I had not seen in several years.That's always good.

Going totally off topic but.........there are not too many movies that I'm ever excited to go see but right now I really want to see this~

Yes,I am a huge SATC fan,watched every episode ever and I'm anxious to see what happens between Carrie/Mr Big/Aidan!!!

10. We have the ability to dress ourselves.
11. We can talk to the opposite sex without having to picture them naked.
12. If we marry someone 20 years younger, we are aware that we will look like an idiot.

14. There are times when chocolate really can solve all your problems.
15. We can make comments about how silly men are in their presence because they aren't listening anyway.

I really love that and had to laugh at some of those.They are SO true!

The New Year~

WOW!!! It's almost 2010!I just can't believe that.
I'm not going to make any resolutions this year but I am making some "promises" to myself.(sounds a little better in my mind)
I am hoping to be able to lose some stress/comfort eating weight that I've been carrying around now for about 5 years.
I also want to start exercising.I know I can't do much at first but that's ok.I have a treadmill that's taking up space in the garage so I'm going to bring that inside and actually USE it.
I'm 2 days in to my new "eating/lifestyle" change and so far so good.
I'm not going to deprive myself but I am going to eat less andf try to make more sensible choices.
This year has not been the easiest and I'm feeling much stonger and more confident for the upcoming year ahead. I've come to learn that life is really what we make of it so this year I'm going to do everything I can to make it better for all of us!

Italian egg rolls c/o Gooseberry Patch YUMMY!

I got this recipe directly off of the Gooseberry Patch Facebook page and had to post it.These sound so good!
I think I'm going to make these for my 2 boys on their birthday this Friday.
You can pretty much never go wrong with a Goosberry Patch recipe!

These Italian Egg Rolls are perfect finger foods for your New Year's Eve get-together, and a tasty way to get your kids to eat spinach! From 101 Easy Entertaining Recipes cookbook, submitted by Carolyn Scilanbro of Hampton, VA.

Italian Egg Rolls
1/2 c. onion, chopped
1/2 c. green pepper, chopped
2 t. oil
1 lb. ground sweet or hot Italian pork sausage
2 10-oz. pkgs. frozen spinach, thawed and drained
1/2 c. grated Parmesan cheese
3 c. shredded mozzarella cheese
1/2 t. garlic powder
14-oz. pkg. egg roll wrappers
olive oil for deep frying
Garnish: pizza sauce, warmed

In a skillet over medium heat, saute onion and green pepper in oil. Remove to a medium bowl and set aside. Brown sausage in skillet; drain and combine with onion mixture. Add spinach, cheese and garlic powder; mix well. Top each egg roll wrappper with 3 tablespoons of mixture; roll up, following directions on egg roll package. Heat 3 to 4 inches oil in a deep fryer. Add egg rolls a few at a time, frying until golden. Drain on paper towels. Serve warm with pizza sauce for dipping. Makes 8.

During one of the regular kickball games outside the Stanton's home, Danny noticed Charlie on the sidelines, grabbed him by the hand and brought him into the house."Danny thought, 'Well, he doesn't want to play sports, here's all my action figures,' and laid them all out in front of him," Duffy recalled. "Danny created that environment for him. Danny figured it out."His charity didn't end once he left the ball field, or a neighbor's yard. He seemed to sense when people around him needed a hand, even the grown-ups. Danny loved to help next-door neighbor Betty Lazzara carry in her groceries."I'd always try to give him a light bag," Betty said, "but Danny would say, 'I can carry that gallon of milk'" and would lug it into her house. He knew a treat from Lazzara's snack drawer would be waiting -- fruit roll-ups or Gushers were his favorites -- and Danny always asked to take home enough for his brothers and older sister, too.He remembered details about the lives of people he met. He'd call out to the older neighbor across the street, "Hey Jim, are you going golfing today?" And when he'd see older men at the local YMCA, Danny would give them a smile and a high-five."You were good to go when he smiled at you," Lazzara said.On his first day of preschool this fall, Danny folded his hands and told his teachers, "I just want to learn."Preschool's most important lesson is how to socialize. Danny already had that down cold. He got along with all the kids and seemed to make the most of every day."You never had to entertain Danny. He was content being by himself, or with people," Marske said.The preschoolers keep journals, dictating to the teachers about the topic of the day. Danny's last entry was about what he was thankful for at Thanksgiving. Other kids said, "food," or "Happy Meals." Danny talked about his family."I'm thankful for Mom, Dad, Tommy, John, Mary Grace. I'm thankful for my toys. My mom and dad help me when my brother tackles me."___The Friday night before Danny's fatal seizure, the Duffys were over with their two boys to watch a Christmas special on TV. Mary brought a big chocolate castle cake, and Danny and the other kids playfully tore off the towers to eat first, then ditched the TV special and clamored downstairs to build a fort in the basement.There, they discovered a hidden bag full of unwrapped Christmas presents, including the one Danny wanted most of all.Danny came upstairs, and with a twinkle in his eyes, playfully announced, "Hey Dad, I'm glad I'm getting that remote control car for Christmas."The next morning, Danny was gone. His parents found him in bed, his lips already blue.He'd had occasional seizures for two years, always at night, always while sleeping, always frightening. After the first one, he slept in his parents' bed for six months. Doctors did tests, put him on medication, found nothing else wrong and said he might outgrow the problem.Seizures, electrical disturbances in the brain, affect roughly 1 percent of all children. Dr. Douglas Nordli, an epilepsy specialist at Chicago's Children's Memorial Hospital, said most otherwise healthy young children do outgrow them; deaths are extremely rare. Causes of these sudden, unexpected deaths are uncertain; it may be that brain signals for proper breathing get short-circuited, or the heart rate becomes too faint to get blood to vital organs."Danny's day-to-day behavior gave no indication of anything wrong with him," Mike Stanton said. "How many seizures did he have that we did not know about? We checked in on him thousands of times while he was sleeping."___Danny's death hit his little storefront preschool hard.Each day, the teachers ask the class which students aren't there. "Danny Stanton," one student said. The teachers nodded, and added that Danny wouldn't be coming back.That got the children's attention. Then came the words, "Danny died." As young brains struggled to process this news, one little girl said, "My cat died." Others asked, "Why?""We said because his heart stopped working," said teacher Deb Phillips.His teachers asked each child to tell what was special about Danny. Some said they'd liked playing with him. Some said they liked to eat snacks with him. One child said, "I loved him."Everyone's thoughts turned to the garden, a once trash-strewn vacant lot nearby that the school has been planning for a few years. It will be a place where the preschoolers can plant herbs and vegetables for homeless shelters; the first seeds are to be sown this spring. Now, plans are in the works for a big sign to post above the garden gate. The exact words aren't set yet, but Marske says perhaps it will read simply, "Danny's Garden.""It will be this living place, where everyone can see" and remember Danny, Marske said.There will be a place at the Stanton's Christmas table for Danny. And his family plans to start a foundation offering guidance for parents of children with night seizures. Its name will be "Danny Did."It was his father who wrote those words on Danny's newspaper epitaph."It just came to me," Stanton said. "That says it all."At their son's funeral, Mariann Stanton stood at the altar with her husband, a few feet from the small white casket. His friends left a soccer ball, football, baseball mitt and drawings in his honor. With haunting, palpable grief etched in her delicate face, she spoke to Danny through sobs, asking how she's supposed to get up in the morning when he isn't there anymore.Father Kurt Boras told mourners there are no answers; "All we can do is hold onto each other," he said. Boras also said he's never been much of a hugger. But there he was after Mass, embracing people leaving the church."Danny got it right," the Rev. Gregory Sakowicz said in a eulogy. "He taught us how to live."

I must admit that I'm not as excited about Christmas this year as I usually am,not to be a downer but there have been so many trials this past year that I guess maybe I just feel a bit worn down.
I've been reading my bible alot lately,especially in the mornings.It's comforting and brings me some peace in this crazy thing that is my life.
I truly love Christmas and I'm trying to be festive,really I am!I know the kids are super excited and putting up the tree,decorating it and making the cookies have been so much fun.
My youngest is almost 4 so needless to say he is really into it this year and even got into the cookie making.
I am blessed and I know it,even through the hardest times I know things could be so much worse.
I'm going to brave some stores and try to get the last of my shopping done today,I think that entails a trip to Starbucks for that yummy peppermint mocha!

I know I'm coming in a bit late but I hope everyone had a blessed Thanksgiving and spent it with all the people that you hold dear.Ours was good,different this year but good.
It's been a very trying year for me and my family but I am blessed in so many ways.

I can not believe that Christmas is less than 1 month away!I have ALOT to do!

I plan on spending this evening watching some Christmas movies on the Hallmark channel and possibly eating the last of the pecan pie.I love this time of year!

It's been a long time since I made this chicken recipe and I forgot how GREAT it turns out without all that much work.YUM!

Tuscan Chicken~

1 Whole fryer chicken or boneless breasts

3 TBSP olive oil

2 TBSP Herbs De Provence (in the spice section at store)

2 TBSP Grey Poupon

Rub chicken with olive oil,rub the seasoning in making sure to coat evenly,add grey poupon and spread all over the chicken

Place on roasting pan (preferably on a rack) for 1 hour at 400 degrees,about 45 min for boneless breasts.

Crispy outside, moist with great flavor and Super EASY!

Wow,it's chilly here!It feels more like late November than mid October.It's like we skipped from hot weather to cold overnight!
I've enjoyed breaking out the warmer quilts,sweaters, and crock-pot this week to make a few cozy up meals,pot roast,mac n cheese w/ham,chili.I also pulled out the bread machine and fired it up this morning,the house smells so good!
I haven't done this in awhile so today seemed to be agood day for it.................

I just got this recipe in my e-mail from "Gooseberry Patch".It sounds sooo good.I made crock pot applesauce and apple butter last year and the kids loved it!
I've never put the pumpkin pie spice in the apple sauce before so that's something new.Sounds yummy!
Spiced Applesauce~
Enjoy this recipe from Autumn with Family & Friends

8 Golden Delicious apples, cored, peeled and cubed
1/2 c. brown sugar, packed
1/2 c. water
1 t. pumpkin pie spice

Combine all ingredients in a slow cooker; stir to mix. Cover and cook on low setting for 8 to 10 hours, or on high setting for 3 to 4 hours. When done, stir with a wooden spoon. Gently crush applesauce against side of slow cooker to desired consistency. Makes 8 to 10 servings.

I absolutely love The Gooseberry Patch cookbooks.I think "Autumn in the Country" is my favorite but I haven't seen this new one yet.

I've been slowly putting all my fall decorations out over the last week or so.I just love the warm colors and how cozy it makes the house feel.I've even seen pumpkins out on porches already!My mother-in-law grew some in her garden this year so I'm hoping to grab some of those soon.
I just can't believe we're half way through September already!I really want to try to slow down and enjoy the season with the kids this year,it seems to go by so quickly and then the rush of the Thanksgiving/Christmas season is upon us.
I've been doing alot of praying lately about helping me to live more in the moment and enjoy the time right here and now.It seems I'm always thinking about the past or worried about what is coming so Yes,I need to work on that!

I'm dealing with alot of things right now.Despite hurdles I'm forced to overcome I am remaining positive and looking to the future.
I have circle of supportive family and friends and what a blessing they've been to me and my family.I hope they all know how much I appreciate them.

I can't believe how fast this summer is flying by.My kids go back to school in 5 weeks! WOW! Fall is right around the corner and that can never come too soon for me!
My oldest son is learning to drive and boy that's a difficult one for me to handle.
Seeing him riding a skateboard is terrifying let alone sitting behind the wheel. Anyone have some extra nerves of steel they want to send me?

So anyway,life goes on with many changes and milestones every day.

Chicken salad and sweet tea!

I love chicken salad sandwiches!I grew up eating them and still use my mom's recipe.
It's simple but so good.What better to team it with than a giant glass of sweet tea! Wow,just screams summer right?!
I didn't make the tea,it's called "Peak" sweet tea and you can buy it by the (big or little ) bottle at your grocery.I found it in the aisle with the OJ and all that.It's really tasty too.

Old time Chicken salad~
1 can white chunk chicken breast
2-3 big TBSP Miracle Whip(or mayo)
1 tsp mustard
1/2 tsp sweet relish
1-2 tsp chopped onion and celery(I like alot but the kids won't eat any!)
dash of salt,pepper,and celery seed

Mix together well and serve on toasted bread or buns.(I know my bun looks a bit mangled and slighty burnt but it's better that way!)
You can get fancy and add some chopped walnuts but I like it just like this.

I just can't believe that tomorrow is the 1st day of June!Wow,spring is nearly over and the long hot days of summer will be here soon. Is it just me or does time go by much quicker now than it did when I was younger???!!

Meaty Rigatoni and The BEST garlic bread!

Well if there is one thing I know my kids will almost always eat is pasta.I don't mind it but I must have a good garlic bread to go with it.This is the BEST recipe if you want to make your own at home.I buy the one in the foil pouch quite often but this is nice when you have the time to make it.I made some meaty rigatoni to go along with it here.I NEVER have leftovers with this!
Of course it's from the one and only Paula!!!YUM!

Paula Deens Zesty Garlic Bread~

1 head garlic, unpeeled
1 tablespoon olive oil
1 cup (2-sticks) butter, softened (I actually used light country style spread)
3 tablespoons minced parsley leaves (dried is just as good)
1/2 teaspoon ground black pepper
1/2 teaspoon salt
1loaf sourdough bread, split horizontally
Directions
Preheat oven to 425 degrees F.

Cut top off garlic head. Place garlic on a piece of aluminum foil; drizzle with olive oil. Fold edges together to seal. Bake 30 minutes; cool.

Squeeze cooked garlic into a medium bowl. Garlic will be soft and sticky. Add butter, parsley salt and pepper, stirring to combine.

Spread cut halves of bread evenly with garlic butter mixture. Broil 5 1/2 inches from heat, with oven door partially opened, for 2 to 3 minutes, or until butter melts and bread is toasted. Cut into slices to serve.

My peonies have finally bloomed!! I just love these so much.They are my 2nd fave flower (next to a rose) and they seemed to be taking their good old time but they have arrived.I only wish they could stay around longer than they do.

I finally got to watch a movie that I've been dying to see over this past weekend.
"Nights In Rodanthe". I read the book (by Nicholas Sparks)awhile back and absolutely loved it.
The movie was a bit different in places but still a very romantic and yes SAD story.
I think the REAL star of the show was the house! It's an almost eerily beautiful beach house in North Carolina called "Serendipity". It suited the movie perfectly and it made me want to go there and live in that house!!(at least visit)
The beach shots were gorgeous and you definitely got swept up in the haunting love story between those characters.(played perfectly by
Diane Lane and Richard Gere)
A wonderful movie but get your Kleenex ready!

New recipe blog

I'm working on a new recipe blog.I haven't updated my old one in ages so I thought I'd just start fresh with all my old ones and some GREAT new recipes I've found.
I love trying the new stuff but it's funny how I go back again and again to all my old favorites.
I made a taco salad recipe yesterday that I've had for more than 20 years and it still tastes great and brings back many memories of my family,friends and so many dofferent occasions.
When I make certain dishes I can literally put myself back at that Christmas dinner or one of the (many!) baby showers that we've had through the years. Those are very special memories for me.It's funny how we can taste a food and be transported back to a certain time or even a feeling.
So,anway I'm going to work on that new blog hopefully soon.
I hope everyone had a safe and happy holiday weekend!
Back to the normal day to day.;p

Wow!It's been more than a month since I've posted.I guess life just happens and there are never enough hours in the day it seems.
I can not believe Memorial Day weekend is here again! My kids will be out of school for the summer soon and I'm looking forward to not being on such a rushed schedule for a few months.
There are tons of roses,peonies,clematis,etc blooming all over here and we have a nest of baby birds and the mommy living in my basket on the porch.It's so peaceful where we live now.I'ts taken some getting used to being so isolated but it sure is nice.

I made the most scrumptious and super rich chicken enchiladas yesterday!I found the recipe on another blog and I hope she doesn't mind me linking to her site here.

Oh my gosh they were seriously so good!!
I added some cumin to the chicken mixture and a bit of paprika on top just because I didn't have the cilantro handy.I also used low fat cheese and half and half instead of the heavy cream because that's all I had but I imagine with the cream and full fat cheese it would be out of this world!
She had a ton of yummy sounding recipes so I plan on visiting her blog again soon.

I seriously can not believe that it's March 1st! It seems like I was just putting up our Christmas tree.
The calendar says it's 2 weeks until the 1st "official" day of Spring and next weekend is already the start of daylight saving time.
Sometimes I really feel like I'm so busy that life is just passing me by like the wind.

I thought I would introduce the newest member of our family...Isabella Rose. She came to live with us back in November and in that short time has charmed her way into all of our hearts forever!
I'm not the biggest dog lover in the world and truthfully have not had the best luck choosing one that was the right fit for our family but this time I think I got it right.
She is the epitome of "cuteness" and although she seems to have some delusion that she is a 100 lb German Shepperd brought here to defend and protect her new family,she is a tiny little ball of white fluff love!
We are so glad to have her here.

I also wanted to share a site I've been visiting quite a bit lately. It's wonderful for recipes and tips around the house to stretch your $$. I'm sure most of us can use all the help we can get lately. There are a ton of helpful sites out there but I've been going back to this one often.

Wow,it's been awhile since I've posted but what can I say? There is always so much to get done around here and the days just seem to get away from me! I've been hopping around and reading all my favorite blogs when I get a few minutes to sit at the computer.Gosh,all you wonderful ladies never fail to inspire me to try a new recipe,be a bit more organized or just plain feel better about myself and restore my faith a bit on days when I sure do need it! I don't leave many comments but I should do more of that so I'll try.I want to tell you all how much you lift my spirits just by your words and lovely photos.
Yes,I watched the Inauguration of President Obama yesterday,how could I not? I must admit to feeling a great sense of pride and hopefulness for our country.I did not vote for him but I will support and pray for him and his family at all times.I'm afraid in the state we're in he is going to need all of our prayers!They seem to be a genuinely nice and loving family and I do hope this monumental journey they are embarking on does not change that
There was one passage in his speech (towards the end) that touched me and actually gave me chills.It rang true in my heart,not only for our country but for each one of us individually that might be battling our own "storms of hardship".I found it very comforting and inspiring. We ALL want a better future for our children and their children don't we?

It has been downright freezing around here lately so I've been staying home as much as possible.I guess as I'm getting older and my bones are getting all brittle I just can't take the cold like I used to.lol The kids (ones not in school) seem to be doing ok but I think I'm getting the old cabin fever about now. I've been trying catch up on reading a few books that had been staring at me for some time and I LOVE scouting other blogs for new recipes.
I started weight watchers again right around Christmas(yea,great timing huh??!!)and so far I'm doing well.
I'm not counting every single point but I know that I'm staying pretty close so I'm ok with that.
I found this recipe the other day for "pieorgies with sage and butter sauce" and thought no way is that going to be even close on pts for my day but it surprisingly in only about 6 pts per serving!
I made it yesterday and it was yummy!

6 pieorgies(frozen,any variety)(I'm not sure if that's the correct spelling on those or not!)
1/4 C frozen pearl onions
non stick butter spray
1/2 tsp ground sage
1/2 tsp parsley
dash of salt and pepper
2 tsp Smart balance spread

spray your pan with non stick spray the add pieorgies and onions,sprinkle with sage,salt and pepper,then cook till just getting a bit brown then add about 1/2 of the smart balance.
Take pieorgies out of pan leaving the onions then add rest of smart balance and a splash of lowfat or skim milk.Stir it a bit till it's a "saucy" consistency then pour over top.Sprinkle w/ some parsley and WAA-LAA!
It's good and very filling!

Wow,it's been quite awhile since I've posted but things have been really hectic the last month or so.
I hope everyone enjoyed the holidays with your loved ones and hopefully you're enjoying a peaceful start to the new year.
We had a good Christmas and celebrated our 2 oldest boys birthdays on Jan 1st.
I am faced with many challenges in this new year but I'm hopeful and looking ahead and I'm so full of faith and support from my family that I know things will be ok.
I've always loved angels and cherubs but it seems lately I NEED to be surrounded by them more than ever so I've started putting out my collection again.I have candles,figurines,pictures,plates etc etc.I'm finding them very comforting right now.
I have a pretty full day ahead today and the kids all go back to school on Monday so lots to keep me busy.
I have a few wonderful recipes that I stumbled across over the holidays and I want to post them soon so I hope to be back to blogging a little more often.

The San Fansisco Treat~HOMEMADE!

I saw this recipe on The Rachel Ray show one day last week it was quite intriguing!
She made HOMEMADE Rice-A-Roni!
I grew up eating the little box version at least once a week so I had to try this one.
Seriously now,the thought that you could do it at home never even occurred to me but it turned out pretty well.The flavor is subtle and not nearly as salty but still good.

I didn't measure anything really but here is how she made it.
1 Cup broken pasta noodles(I used whole wheat spaghetti and some regular linguine)
olive oil
chicken broth(or stock)
salt
pepper
butter
1/2 tsp parsley
1/4 tsp or so of sage and thyme
brown the broken pasta in some olive oil for about 6-7 min
add the chicken stock,butter, and seasonings then simmer until all the liquid is absorbed.

It even smells like the box version,YUM!

I can't believe we are so close to Thanksgiving, and Christmas is just around the corner!
We have some BIG changes going on around here right now and I hope to be able to post about them soon.It's amazing what blessings can come to you when you least expect it.

I've been hopping around some of my fave blogs this morning and so many of them have been all gussied up in Christmas style so I thought I'd jump on the bandwagon.I know it's still early but in my mind you can never start the holiday season too early!
My kids must feel the same way because I've already been given 3 Christmas lists all folded and and ready to go to Santa!

They are all off school today for parent/teacher conferences and yes I have to go to 5!(not all in one day thank goodness)It's alot cooler out today than it has been all week,yesterday it was 75 degrees and today it's not even 60 and pretty dreary out as well.Yep,it's November!

I found this link on one of the 12,000 blogs I visited today (can't recall which one,sorry!)It's an online radio site that plays Christmas music all 24/7!I love it!!

I adore Paula Deen! I've been watching her since "Paulas Home Cooking" premiered on the Food Netwok.My middle daughter always watches her with me whenever she's on and it's become a sort of "bonding time" for us.We've whipped up so many of her recipes and I just love that time that she and I spend together.Well,when I saw this.......

I knew I had to get it for her for Christmas!This will actually be the 2nd cookbook I've gotten for her but I think she'll really love this one. I glanced through it a bit and found this yummy recipe.It would be fun to make with the kids or for a Halloween party.

Recipe c/o Paula Deen~

What you’ll need:

dry measuring cup
measuring spoons
medium glass bowl
large spoon
teaspoon
waxed paper
resealable plastic bags or plastic storage container with tight fitting lid
Ingredients:
1 cup butterscotch Morsels
1 tablespoon creamy peanut butter
1 cup dry roasted peanuts
1 cup chow mein noodles
Directions:
1. Put the butterscotch morsels and peanut butter into the mixing bowl. Microwave on high power for 1 minute, remove the
bowl, and stir. butterscotch morsels should melt as you stir, but if they don't, don't worry! Just put them back in the
microwave for 15 seconds more and stir again.
2. When the butterscotch is completely melted and smooth, stir in the peanuts and chow mein noodles. is will be stiff and you
may need an adult to help you . Use a teaspoon to scoop out a little of the mixture and mound it on to the waxed paper. These

Sadly,I must admit that it's been several years since I've had one.It shames me to even say that and it really does weigh heavily on my heart to get one done soon.
I wish we would take care of ourselves more than we do but I know many women who do not get them regularly.I have breast cancer in my family so you'd think that I'd be more on top of it.I've seen a loved one endure the lumpectomies and radiation.
You think about it and swear you will make an appt but then the time just seems to get away from you.
We all MUST do this for ourselves and so we can be here for our families,our children and grandchildren.I want to be that 90 year old woman sitting on my porch holding my great grand-babies!

Fireside soup and a good movie

I don't remember where I got this recipe but I've had it a long time.
It's unusually warm around here this weekend but it still sounded sooo good to me today.The name is definitely fitting,this would be great to have on a chilly fall evening in front of the fire.

4 Cups 2% milk
1 can cream of chicken or potato soup (either will work fine)
1 Cup frozen has brown potatoes(cubes)
2 TBSP each of finely chopped celery and onion
1 TBSP butter
1/2 tsp each of sage and thyme
3/4 Cup shredded cheddar
1/4 cup sour cream
3 pieces crispy cooked bacon chopped
dash of salt and pepper

cook the celery and onion in butter till tender.
add all other ingredients and bring to a low boil then simmer for about 15 min.
Top with some sliced green onions and addtl cheese if you like.
So rich and good, just plain comfort food. Just what the Dr ordered for me today!

I also pulled out one of my fave movies to watch around this time of year.
It's a Hallmark movie (which are all so good)called "A Time to Remember".I guess it was on TV back in 2003 but I never saw it until I got the DVD at Target a couple years ago.
It's a very touching story and worth watching.

I was thinking of heading to the pumpkin patch this weekend but I like to go when there is a bit more "chill" in the air.lol It just seems more like fall when it's not 80 degrees outside.
The leaves are just starting to turn colors around here and it is just gorgeous.
I just love this time of year!

The kids are starting to eye the costumes that they want and here is a pic of my 3 youngest boys and the middle ones oh so lovely and charming zombie costume.(on sale at CVS it was normally 19.99 and I got it for 13.99 with the 25% off sale and coupon.(love that CVS card!)

Happy October!! I just can't believe it's here already.
I'm really excited for Halloween this year! We've never lived in a neighborhood like this where we could actually go trick-or-treating without having to travel all over town.
The kids are wanting to do up the house all haunted house-ish so this should be fun.

My oldest son will be going to his 1st High School Homecoming(yikes,with a GIRL!) this weekend!How did this happen??!!

I've been wanting some pumpkin pie for weeks and kept thinking I should wait at least till October so I think I'll make one this weekend if I have time.I just love this time of year!

Super Fast Supper!

I've been on a bit of an unplanned "blog break" this week but here I am.I just can't stay away very long.lol
I've been dealing with some pretty unpleasant "stuff" that I don't want to go into but it looks like things are hopefully improving.

This is probably one of the very first things that I ever cooked for the hubby way back in 1873.(just kidding!It's really only been about 16 years ago)
The mom of a good friend of mine used to make it and and I had her give me the recipe when we moved into our 1st apartment together.I think I actually only knew how to make like 5 dishes and this is one of them!
It's so super simple but I probably never would've thought to put the stuff together on my own.
If you need something fast and easy this is it!The kids never complain about it too much either so I make it every other week or so.

1 pkg smoked sausage or polska keilbasa
1 Large can green beans/potatoes
seasoning salt
pepper

In a large pot brown the sausage in a bit of olive oil for about 4-5 min
throw in beans and poataoes(along with water in can)
throw in a dash of seasoning salt and pepper then simmer for about 15 min or so.
I usually serve this with crusty french bread with herb butter.

Herb butter~
1/2 stick softened butter
dash of olive oil
1 TBSP "Herbs De Provence"

Mix well and spread on sliced french bread then place under broiler for a bout 4-5 min.(top with parmesan cheese b4 baking if you'd like)

Well,we've been without power since yesterday afternoon due to the remains of hurrican Ike sweeping though.It was unbelievable.We had up to 75 mph winds,trees are down all over,4 people died,several areas are looking at days with no power.
We lost a shutter,some window screens,many huge limbs came down. I've never seen anything like it.Thank god none of my family or friends were hurt as far as I know.I'm still trying to get into contact with some of them.
I can only imagine what it was like where the winds were double what they were here,along with massive rain and flooding.It makes you appreciate what a hurricane is really like that's for sure.
I took some pics I'll post later.I need to get my house and yard back to some sort of order.
It was scary,very scary.

I just saw a report on the news that basically said if parts of Texas did not evacuate they'll be facing certain death.Oh my,I hope somehow it turns out to be weaker than they think. I'm sending thoughts and prayers out to all those in it's path.I have a couple "web friends" in Texas and I'm hoping they have found a safe place by now.

Burrito Casserole aka Mexican Lasagna

I hadn't made this in a long time and it's a super simple quick-fix meal.I think it's called Burrito Casserole but the kids always called it mexican lasagna.It does look like that with the all the yummy layers.

1-2 lbs ground beef (or turkey but that will give it a different flavor)
1 pkg 8" flour tortillas
1 pkg taco seasoning
1 jar salsa
1 can refried beans(I use fat free)
1 small onion chopped
2 Cups colby/jack cheese blend
1/2 tsp fresh or dried cilantro
toppings~shredded lettuce,tomatoes,jalepenos,black olives,sour cream,whatever you like.

brown beef and onion then drain,add taco seasoning with a splash of water and let simmer for a few min.Mix salsa and beans together in bowl.
Begin layering tortillas (2 at a time) in 9x12 casserole dish.
add some of beef mix then bean mix,then some cheese.Continue layering just like you would lasagna.Top with cilantro then bake at 350 for 20-25 min then under broiler for about 5 min or until a bit brown and bubbly.
YUM!

We all should take at least a moment today to remember.Where were you? What were you doing? I was standing in my kitchen after getting my 2 oldest off to school,I was watching the news when it happened.My hubby was home and I think we were just shocked.Was this true? Sadly it was.I remember crying and being so fearful of what would happen.This truly changed all of us and our country forever.
Has it really been 7 years already? We've all moved on but I know I'll never forget.
Today I will still pray and shed tears for all of those who lost their lives and the loved ones they left behind.

The Festival hopping has begun!

Well,we went to our 1st festival of the season yesterday and it's one of many more to come over the next couple of months.There were actually like 3-4 going on but we went to the closest one to us. We've gone almost every year for at least 15 years or more.It's always super hot and insanely crowded but so much fun.The smells of all that wonderful greasy food and the quaint little craft booths.(I didn't go overbaord,just a BBQ sandwich and some fried shrooms)There's tons of stuff for the kids to do as well. My oldest son decided he had to go with his friends for the last 2 years and this time my oldest daughter seemed to cringe every time one of hers went by and saw her with (yikes!) her family!!!
The weather this year was actually much cooler than it usually is and that made it more enjoyable.I look forward to these festivals all year and it's one sure sign that fall is coming.I think we have 2 on the agenda for next weekend!

I took these pics of my oldest daughter and my mother in laws house over the weekend and this is one of 3 horses that she has.
We've watched this horse be born and then grow into this giant majestic animal.(she's actually standing on a chair next to him)They hired a trainer last year to teach them to ride and break him in.(I believe that's the term)She has been waiting and wanting to ride him for so long and she finally got to do it.I was nervous about it but they both did really well.He's a pretty mellow horse compared to his mom and sister.Both of whom are very excitable and stubborn.I thought it was just so amazing to see how far he had come.
I'm not a big horse person and know very little but I always enjoy being around them.
My silly camera decided to stop working when she was actually on the horse so I'm hoping to get a few shots of her when she goes back this weekend.She really seems to have a connection with these amazing animals.It's funny that all 3 of my girls love the horses but none of my boys seem in the least bit interested.Wonder why that is?

Crock Pot Apple Butter

Nothing says fall like some fresh apple butter on a warm biscuit!YUM!

8 apples - peeled, cored and chopped
4 cups white sugar
4 teaspoons ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon salt

DIRECTIONS~~
Fill a slow cooker with diced apples, sugar, cinnamon, cloves and salt. Cover, and cook on high for 1 hour. Reduce heat. Simmer, stirring occasionally, for 12 hours, or until thick and dark golden in color.

My prayers are still with those in the path of the storm.It sounds like it might be weakening,let's hope so.

I never got around to making the apple butter yesterday but I'm going to try it someday! There's just never enough hours in the day.
The hubby ended up only working for a short time so we went to my mother in laws house to drop of 3 of the kids for the day.She has horses and dogs and all kinds of room to run so they enjoy being there.It was nice to get a little break I must say.
We only had my oldest daughter and the 2 youngest so we walked around the flea market which was hot but fun,then we ate dinner at a local place famous for it's wings. (it was actually where hubby and I had our 1st date,real romantic huh??!!)
We had a nice day.

I've been keeping an eye on the giant hurricane headed for Louisiana and it's just so frightening.I have family in Florida so every time there's a storm down there I worry.My thoughts and prayers go out to all those people in it's path. I hope they can get to a safe place. I can't imagine feeling that helpless,just knowing it's coming and not a single thing to do about it.

I can't believe it's Labor day weekend? Where did the summer go? School has started and we had our 1st big football game last night.(unfortunately is got pretty much rained out)I've never been a big game watcher but my 2 oldest started going last year and now it's mandatory around here.It is fun to see all the kids (and parents!)and the way they paint themselves up with the school colors.This town has always been big on that team spirit stuff.
This is my favorite time of the year and I usually start putting out my fall decorations around now.Well,ok truthfully I've already started but as I've been hopping around other blogs I see I'm not the only one that gets started early!
I just love the warmth of the colors and all the homey smells.I've had this recipe for crock pot apple butter that I've wanted to try for a few years now I think I might give it a go this weekend.The hubby is working all day today and I have a ton of cleaning to do but it looks pretty easy.I want to get the house all straightened up(as straight as it gets anyway)before I start bringing all the fall stuff in from the garage.I can't wait!
I actually saw a home in our neighborhood with pumpkins out on the porch already!

What the heck and me feeling sorry for myself

I've noticed something very disturbing lately. I guess it started about a year or so ago but lately it's gotten ridiculous.
My hair is falling out!!!!!!!!!!!!!
I always lost some here and there and I know that's normal but this is different.It's on my clothes,in the car,on the pillow,and when I wash it I can literally pick it up off the shower floor.
I color my hair and haven't had a good cut in quite some time but would that cause it? I've heard the older you get the more you lose but at this rate I'll be bald by the time I'm 45.I also blow dry and occasionally use a straightener so that's not good either.
I'm thinking some sort of vitamin deficiency maybe? Stress? I just don't know but it's really starting to bother me alot.I have to pull it back when I cook or otherwise well...you can imagine.
I need to look into the possible causes some more I guess.I hope I find a solution cause I've never looked good in hats.

And in other compelling news around here my 2 year old now refuses to eat anything other than p,b,and j sandwiches.He calls them "butter toasts" and wants them for breakfast lunch and dinner.He's always eaten well and they're not too bad for him so I guesss it's ok.He went through a similar phase before but it was mac n cheese.

The kids 1st day of school went off well.They all seemed to have a good 1st day and it felt good to be in some sort of routine again.I took pics of course (I'll post them later on) I tried to take one of my oldest son walking to the bus but he got highly irritated and gave me the look of death when I held up the camera in front of all the kids on the high school bus.Geesh you'd think he'd be used to it by now.
I can't explain what it felt like to see my 1st born baby drive off as a"freshman". I knew I would be sad (I always am at the big milestones) but I wasn't prepared for how I've felt since yesterday. I remember his 1st day of preschool,elementary,then the big move to junior high now this.Wow.College and marriage are just around the corner.
I want his high school years to be memorable and I have so many hopes and dreams for him as he steps into this new chapter of his life.I hope he knows how much I love him and how proud I am that he's overcome some very difficult times that he's had.
Gosh wasn't he just the 2 year old under my feet now he towers over me.

I've been running like a chicken with it's head cut off for days now trying to get 5 kids ready to go back to school and I think we're almost set to go!
Supplies,shoes,bags,haircuts,lunches packed,and a mound of paperwork and we're off tomorrow morning.
My oldest son will be a freshman in high school and that just blows my mind.I have my youngest daughter starting kindergarten as well so this is a big year.(how did I get old enough to have a kid in high school!!??)
So,anyway I'm feeling very "fall-ish" today so I wanted to look at some gorgeous fall colors in one of my very fave places,Tenn.

I'm making one of the kids favorite meals tonight Cheesy Chicken Noodle Casserole with mashed potatoes. They're not big on casseroles but they like that for some reason.I usually make whatever they want the night before back to school.I also wanted to make some cookies but just never got to it.This mommy is worn out and seeing glue sticks in my sleep.It will be nice to get back to some routine!

Cheesy Chicken noodle Cass~~~~~~~~~~~~~

1 pkg egg noodles cooked and drained
1 Cup frozen mixed veggies~cooked
1 can cream of celery soup
1 can cream of chicken soup
1 soup can of milk
1 large can chicken
2 tsp parsley
salt and pepper to taste
2 Cups cheddar/Colby blend cheese
1/2 Cup seasoned bread crumbs

in a large bowl combine all ingredients (except noodles and bread crumbs) add noodles then transfer to a buttered or sprayed 9x13 casserole dish.
top with bread crumbs and parsley.
Bake for 30 min at 375 then 5-6 minutes under broiler.(you could top with more cheese if you'd like before the broiling step)

Coffee moments

I love coffee.I remember when I was a little kid growing up my dad would always sneak me a cup when my mom wasn't around. He would put a ton of cream and (gasp) REAL sugar in it. It wasn't made in a new fangled fancy coffee maker either,nope this was coffee slowly perked in a real percolator.I recall sitting and waiting for it to bubble up through the little clear top and anticipating that warm comforting aroma.
Christmas morning was the time I could have it with his fried eggs that he only made once a year.My mom hated them but I thought they were the best!They were all greasy and buttery and just wonderful with that sweet coffee.
Those are special memories that I have with him.I'm not sure why he let me have coffee other than maybe because he loved it so much and just wanted to share it and pass along that caffeine addiction.I'm sure that's when it started forming.
I had a dream about my dad last night and for some reason woke up thinking of those little "coffee moments" we shared.
I wonder if he even knows that I remember that? I should tell him.

My puffy eyed and sniffly weekend

Well this past weekend was hectic.My oldest daughter went on a weekend trip with a friend for the first time ever so I was worried senseless all weekend.We did a garage sale on Saturday then spent the rest of the day going through a bazillion dirty and dusty boxes from storage.I think I sneezed the whole way home.
I felt kind of yucky on Sunday.I'm not sure why other than maybe this cold/allergy thing I've had going on for weeks now.I just felt tired.
I sat down in the evening and found one of my all time fave movies on.Yep,you guessed it."The Notebook"!!!

I know it's insanely sappy but I adore it and I'm not ashamed.
I read the book years ago(b4 the movie came out) and fell in love with the story then and there.Oh to really find that one true love that would endure anything,even death.Does that exist?It does make you believe.Of course I cried my eyes out so today(between the allergies and my bawling)they're even puffier than normal.
This is one of the poems from the movie.Noah(older)reads it to Ally towards the end it just gets me every time.

I started reading this today.

It's supposed to be the sequel to Noah and Ally's story so I'm looking forward to it.It centers around their son and his family.
My hubby actually bought me the book a few years ago and I'm just now getting around to reading it.Yea,that shows you how often I get to read.
I know it will take me forever to get through it on my limited reading time but I'm off and running with 5 pages read today!

A little side note to my last entry~
I have been trying (wit no luck) for quite some time now to get all the kids (along with hubby and I) to actually SIT at the table for dinner.I can always get the little ones there but for some reason the older kids (and even hubby is guilty of this) just stand around the kitchen holding their plates while inhaling what's on them as fast as humanly possible then taking off.It's almost like a race!
I can't understand why no one can even sit for 10 minutes?? I think in these times it would do us all some good to get back to that "family dinner" time even if it's not every single night at least sit and actually speak to each other a few times a week.
How do I manage to do it??

Dinner last night

Well here is the new recipe for Salisbury steak I tried last night. I usually use a different recipe but I lost it (and was feeling lazy)so I kinda went out on a limb and made it up as I went along.
It turned out really well!! Yes,I was surprised! We've been eating so much Mexican and Italian lately that this was a nice change.
You know it's funny but growing up my mom and g-ma rarely used recipes. I remember them just flying around the kitchen adding this and that and NEVER hardly measuring anything.It always tasted good tho.

2 lbs ground beef
1/2 C bread crumbs
1 egg
1 envelope onion mushroom soup mix
1 smallish onion (sliced)
1 tsp minced garlic
olive oil
parsley
salt and pepper
cook the onion and garlic in the olive oil (use a large skillet)for a few min till tender.
add all ingredients together (except flour)and form into patties. Coat both sides in flour then add to pan. Cook till done all the way thru.
Add the following then simmer for about 20 minutes.
1 can cream of mushroom soup
1 C milk
1 tbsp ketchup
1tsp mustard
1 tsp Worcestershire sauce
serve over mased potatoes or egg noodles.
I also made a SUPER easy cherry cobbler with vanilla ice cream for desert! Now I very rarely make sweet stuff so the kids thought it surely must be a holiday or something.
I found the recipe in this book that I got from the library.It's a real hoot for all the southern (and us wanna-be southern gals!)

I've been looking for a work at home (online) job for a long time now and I think I might have found a couple possibilities.My biggest challenge is finding the quiet time and place that I would need to even make it work.
I'm hoping when the kids start school I can try it.
I've also been working on some weekly menus and collecting some coupons from various sites.I feel like some days the house is out of control (including me) so I'm really trying to get my organization in check and I'm making (hopefully positive) changes in our lives.
I guess I have a lot on my mind right now and I want to blog about it when I get my thoughts together.It's been another busy as a bee day around here so that may take awhile.

busy busy

I slep too late today.My hubby was home this morning so I stayed in bed till almost 10:00!! I never ever, ever, ever do that!I tried but just couldn't seem to wake up. I guess between the heat and being sick my body just decided it knew better than my head did.I hate it tho because now my day is just all out of whack.
I still can't believe school is starting in less than 3 weeks.
I am so not ready.I've done no shopping,gotten no supplies,all the kids want haircuts and my oldest 2 need to go to the dentist.Hubby is literally working from morning till night most days so he hasn't been around to help out much.
This time of year is always so hectic and now more so due to the fact I'll have 5 kids in school.
I always start longing for the crisp fall days around now too. This has been a weird summer as far as weather goes so who knows when we'll actually get a day like that.
I need to start on dinner but have clue what to make.
We've been eating at home nearly every single night ($$ issues)so I've run through all the standbys over and over.I have found a few recipe sites that have some great ideas.
www.allrecipes.com is my new fave. So many recipes and they even have reviews so you can get an idea of how they might turn out before you make it.
I'm off to do some laundry before we have to start drying off on paper towels.

Blogging and other stuff

I really enjoy blogging and there are so many interesting blogs out there to read,you can get lost in them.
Some are very specific such as parenting,cooking,decorating,homeschooling,gardening,etc etc etc!
I guess my blog is having an identity crisis.I don't really know all the "BLOG ETIQUETTE" but I generally blog about what's going on in my life at that time.It could be about my kids,a recipe,something that inspired me,my home. I don't feel the need to be"blog specific".
There are so many things going on in my life that there is no way I could only write about one topic every time.
I also don't blog ever single day,I just don't have time.There are many days I have the intention to but just don't get around to it.
Some people seem to dislike music on the blogs,hmmm I like it.I visit certain blogs at times just to listen to it while I'm working around the house.

I read many various blogs on any given day and some I enjoy and some I do not.There are many wonderful and creative women out there and I'm almost always inspired by a photo or a sentiment.I rarely leave comments but I should. (another blog rule I break)There are also blogs I've read that tend to be very sarcastic and negative.I try to stay away from those and really wonder why you would take the time to put so much energy into writing something that might bring others down.
Anyway I want my blog to reflect me and who I am and also what makes me feel good (or bad)
I hope someone who might be reading will get a chuckle or be inspired by something I've written or by sharing some small part of my sometimes crazy life.
Isn't that what blogging is really about?

So anyway....I have this wonderful recipe that I found on www.allrecipes.com for "Amish Meatloaf".(I tweaked it a tiny bit)
I made it last night and it was a switch from the same ol recipe that I always make.I really liked it and even hubby ate the leftovers before he went to bed.(not the smartest choice but whatever,lol)

Here it is,it's a bit sweet but really flavorful.It would be great with some sort of cheesy potatoes.

2 lbs ground chuck
2 eggs
2 Cups crushed butter flavor crackers
1/2 c ketchup
2 TBSP brown sugar
2 TBSP grated onion(I love onion but if the kids actually SEE one they won't eat it!!)
dash of seasoned salt and pepper
3 tBSP dried herb stuffing mix
(my little trick that I use when making meat loaf,it adds so much flavor and makes it super moist,no one even knows it's in there)

topping~1 Cup Ketchup
2 TBSP mustard
dash of apple cider vinegar
1 tsp brown sugar
pinch of allspice

Combine all ingredients and bake at 375 for about an hour.I put 1/2 the topping on prior to cooking and the other 1/2 about 20 minutes before it was done.
YUM!!!

I have an upper respiratory infection and so here I sit in the dead of summer drinking hot tea and eating chicken soup.I hate that! I always get sick this time of year.

I have so much to do today and the kids STILL need to be registered for school.I always drag my feet on that but I need to get moving. It's only 20 days till school starts!!! Where did July even go!!!???

My youngest little girlie will be heading off to kindergarten this fall.I just can not believe it.
It seems like yesterday that I was buying pretty little pink dresses and planning her rose covered nursery.
She had a check-up this morning and got 3 immunizations.She didn't even cry.
She's such a girly girl but can also be one tough cookie.I guess she has to be with all her brothers around.
Life is just passing me by too fast.

SIMPLIFY.

It's a word you hear and see alot these days. I've been working on doing just that for a long time now. It's much easier to say than it is to do I must say.
I feel that in this time in my life tho it's vital for me and my family to at least try. What does it mean tho? Does it mean de-clutter your home,your thoughts,your relationships?? I guess maybe (at least in my case) a bit of all of that.I'm sure it could mean many different things to different people.
I feel very blessed in many ways but the last few years (especially the last year or so) has been very challenging. I've gone through things that I never imagined I would.I've most definitely learned that ALOT of things that I was so gosh darn sure that I had to have in my life,well,I really don't need them at all.
I guess in the end you must go through life experiencing the good and the bad (along with lots of ugly) to get to that point of being able to "simplify". In the end it's so much more than a word on a sign,it really is a life lesson.
I know the things that are important to me.I know what I need in my heart to be able to move through this life and be a positive and productive energy for myself and my family.I've learned the things that I really enjoy doing and that put joy in my heart and nourish my soul.I try to stay away from what I know will deplete me or crush my spirit.
I've learned it through pain,tears,humiliation,grief,fear,and anger but also through love,support,and understanding.
The song on my playlist is by Martina Mcbride and I am a huge fan of hers but this one was never a favorite of mine. I heard it this morning and wow,the words took on a whole new meaning and shot straight to my heart.They touched me and called to me in a way it never had before.It was inspiring.
Maybe it really is that simple.

Summer Roma salad~

I love this salad in the summer!

3-4 roma tomatoes,chopped and seeded
1/2 red onion chopped
1/4 Cup mozzarella cheese
2 tsp fresh basil chopped
salt and pepper
dash of parm cheese and garlic powder
olive oil to taste(about 1-2 TBSP)

Throw all ingredients together in bowl and serve chilled.Great for picnics

Paula made this amazing looking "BBQ pizza" on her show last night. She actually grilled the crust before adding the toppings then cooked it in the oven. I'm so going to make this.

1 1/2 cups cooked, shredded barbecue rotisserie chicken
1 1/2 cups barbecue sauce
1 pound pizza dough, recipe follows or store-bought
1/4 cup olive oil
1 cup shredded sharp Cheddar
1/2 cup shredded mozzarella cheese
1/4 cup small diced yellow bell peppers
2 tablespoons thinly sliced green onions
Sour cream, optional

Preheat a large, 2 burner cast iron grill over medium-high heat. Preheat oven to 375 degrees F.
Toss chicken in 3/4 cups of the barbecue sauce.

Divide the dough in half. On a lightly floured surface roll 1 piece into a 10-inch circle. Stretch it by hand to make it an oval so it will fit on the grill. It doesn't have to be perfectly shaped but try to make the thickness as even as possible.

Lightly brush 1 side of the dough with olive oil. Transfer to the preheated grill, oiled side down and brush the other side with olive oil. Within 1 minute the dough should begin to puff and get crisp on the bottom. Flip the dough over and grill another minute or so until marked and crisp. Transfer the grilled pizza crust to a parchment paper lined sheet pan.

Spread 3/4 cup of barbecue sauce on top of pizza crust. Scatter chicken, the cheeses, diced peppers and green onions over crust. *Cook's Note: Do not over top the pizza or it will be too heavy for the crust and will make it soggy.

Bake the pizza in the oven for 5 minutes or until the cheese melts. Repeat with remaining ingredients.

Cut pizzas into wedges and serve with sour cream if desired.

I'm totally baffled by the show "Lost".
I watched the 1st season and actually enjoyed it.It was different and mysterious but where the heck did it go?! It's gone off in all kinds of crazy directions.I sit and watch it( not by choicwe,it's the only tv show my hubby watches every week) and my mouth just hangs open. It's so confusing.
The characters die then come back,there's time travel,weird black smoke that eats people,etc etc
I guess when I watch tv I want it to be enjoyable and relaxing not give me a headache.Maybe it's me.
